Pineapple Drop Cookies are a favorite of kids for the holiday season. They're moist and soft with just a hint of pineapple chunks.
- 1 1/2 cups sugar
- 1/2 cup shortening
- 2 eggs
- 1 small can crushed pineapple (well drained but not totally dry)
- 1 tsp soda
- 2 tsp vanilla
- 2 1/2 cups flour
- 1 tsp salt
Blend sugar, shortening, eggs, vanilla and pineapple. Set aside. Combine dry ingredients. Slowly add dry ingredients to creamy mixture. Stir.
Bake at 400 degrees for 10 minutes.
