Mexican Shrimp Delicacy in RiceIngredients:
Preparation: Soak the long grained rice in one cup of water and 1¼ cups of red chile sauce in a sauce pan. After soaking is complete allow the rice to remain for another 10 minutes. Keep the sauce pan on high heat initially until the rice begins to bubble and then lower the heat so that the rice settles. Take a large skillet and heat olive oil with garlic cloves and green pepper for about 2-3 minutes. Add shrimp and lime juice to the skillet and continue cooking until the shrimp turn pink. Do not over cook the shrimp, as the taste withers away quickly. Add the remaining red chile sauce to the shrimp and simmer over low heat. Place the cooked rice onto a serving plate and add the cooked shrimp on top of it. Garnish the plate with cilantro for taste and decoration.
