Preparation: Prepare a cup of fresh orange juice. Take the mint leaves and chop them fine. Dip the chopped mint leaves in a solution consisting of fresh orange juice, sugar and grated orange peels and allow them to settle. Cut the chicken into small pieces and allow them to dry out. Add sufficient salt to the dried chicken pieces and cook them until browned. Boil 5 tablespoons of vinegar and add the mint and orange juice solution. This gives you a sauce which is tasty. Cook the salted chicken pieces and add the vinegar sauce prepared, over low heat, so that the chicken pieces are soft and tender. The chicken is now ready to be served with perhaps a side dish of relish.
