Pastel Pink Lemonade Pie
Ingredients:
1 (8 oz.) pkg. cream cheese, softened
3/4 C pink lemonade concentrate
4 drops of red food coloring
1 (8 oz.) carton whipped topping thawed
1 (9 in.) shortbread pie crust
Preparation:
Place the softened cream cheese into a medium size mixing bowl.
With an electric mixer on low speed beat the cream cheese until smooth.
Add the lemonade and food coloring to the cream cheese and beat on medium speed until well combined.
Fold the whipped topping into the mixture until completely combined.
Transfer the mixture into the pie crust.
Cover and freeze for 20 minutes.
Remove from the freezer and place in the refrigerator until ready to serve.
