Lemon cake mix can also be used to make these cookies. When using a lemon cake mix substitute 1/4 C of milk for the vegetable oil. Do not tint the batter.

Spring Cake Mix Cookies

Ingredients:

• 1 (18.25 oz.) box white cake mix
• 1/2 C of flour
• 2 eggs
• 2/3 C of vegetable oil
• 2 drops each of pink, light blue, light green and yellow food coloring
• Powered sugar

Preparation:

1. Place the oven temperature at 375 and allow the oven to heat while preparing the cookie mix.
2. Pour the cake mix into a large mixing bowl.
3. Add in the flour and toss together to combine.
4. Stir in 1 egg and mix the egg into the batter.
5. Add the second and mix again to incorporate.
6. Stir in the oil and mix the ingredients together well.
7. Divide the dough into 4 separate bowls.
8. Tint each bowl of dough with a different food coloring.
9. Roll the dough into 36 balls.
10. Place the powdered sugar into a shallow bowl.
11. Roll each ball through the powdered sugar until completely covered.
12. Place each ball 2 inches apart on an ungreased cookie sheet.
13. Bake 10 minutes or until soft and just beginning to brown on top.
14. Allow the cookies to cool on the cookie sheet for 2 minutes.
15. Remove to a wire rack to cool completely.

Makes approximately 36 cookies

Bake at 350 for 8 minutes or until soft and lightly browned.
