Lemon cake mix can also be used to make these cookies. When using a lemon cake mix substitute 1/4 C of milk for the vegetable oil. Do not tint the batter.

Spring Cake Mix Cookies
Ingredients:
1 (18.25 oz.) box white cake mix
1/2 C of flour
2 eggs
2/3 C of vegetable oil
2 drops each of pink, light blue, light green and yellow food coloring
Powered sugar
Preparation:
Place the oven temperature at 375 and allow the oven to heat while preparing the cookie mix.
Pour the cake mix into a large mixing bowl.
Add in the flour and toss together to combine.
Stir in 1 egg and mix the egg into the batter.
Add the second and mix again to incorporate.
Stir in the oil and mix the ingredients together well.
Divide the dough into 4 separate bowls.
Tint each bowl of dough with a different food coloring.
Roll the dough into 36 balls.
Place the powdered sugar into a shallow bowl.
Roll each ball through the powdered sugar until completely covered.
Place each ball 2 inches apart on an ungreased cookie sheet.
Bake 10 minutes or until soft and just beginning to brown on top.
Allow the cookies to cool on the cookie sheet for 2 minutes.
Remove to a wire rack to cool completely.
Makes approximately 36 cookies
Bake at 350 for 8 minutes or until soft and lightly browned.
