Baked Beef Stuffed Sandwiches - Don't need all those sandwiches in one setting. Wrap them tightly in foil and freeze for up to 3 months. To reheat allow the sandwiches to thaw in the refrigerator overnight. Place the foil wrapped sandwiches on a baking sheet and bake in a preheated 350 degree oven for 12 minutes or until hot.

Baked Beef Stuffed Sandwiches
Ingredients:
1 1/2 lbs. lean ground beef
1/2 C onion, chopped
1 (15 oz.) can tomato sauce
1 (4 oz.) can green chilies
1/2 C fresh mushrooms, chopped
2 tbsp ripe olives, sliced
2 tbsp chili powder
1/4 tsp garlic salt
1 C of cheddar cheese, shredded
8 sourdough rolls
Preparation:
Crumble the beef into a large skillet and place the skillet over medium high heat.
Stir the onion into the beef until blended in well.
Cook, stirring occasionally, for 8 minutes or until the beef is cooked through.
Drain the beef well and return to the skillet.
Stir in the tomato sauce, chilies, mushrooms and olives.
Sprinkle the mixture with the chili powder and garlic salt stirring to combine.
Bring the mixture to a steady boil, reduce the heat to low and simmer 10 minutes.
Fold the cheese into the mixture well and continue cooking 5 minutes or until the cheese has completely melted.
Preset the oven temperature to 350 degrees.
Cut 1/4 inch from the top of each roll and set aside.
Hollow out the rolls leaving a 1/4 inch shell.
Fill each roll with 1/2 C of the meat mixture.
Replace the top of the rolls.
Place the rolls on an ungreased baking sheet.
Bake 12 minutes or until heated through.
Makes 8 servings
