Cajun Dipped Onion Rings - Having burgers on the grill for your Father's Day dinner? Add these onion rings on the side. Non alcoholic beer may be used in place of the regular beer. The Cajun dip is optional if dad prefers ketchup.

Cajun Dipped Onion Rings
Ingredients:
Vegetable oil
1 sweet onion, sliced and separated into rings
2 1/4 C baking mix, divided
1 C of beer
1 tsp salt
2 eggs
1/2 C salad dressing
1/2 C sour cream
1/4 C chili sauce
1 tsp horseradish
1/4 tsp cayenne pepper
Preparation:
Pour 1 1/2 inches of oil into a deep fryer or large sauce pan.
Allow the oil to heat to 375 degrees.
Place 1/2 C of the baking mix into a mixing bowl.
Toss the onions in the baking mix.
Place the remaining baking mix into another mixing bowl.
Pour the beer into the bowl and sprinkle in the salt.
Add the eggs and stir until the batter becomes smooth.
If the batter is too thick add 1 tbsp of beer at a time until you reach the desired consistency.
Dip the onion rings into the batter letting any excess batter drip back into the bowl.
Fry the onion rings a few at a time for 1 minute.
Turn the onion rings with a fork and fry an additional 1 minute or until golden brown.
Drain the fried onion rings on paper towel.
Allow the oil to heat back to 375 degrees before adding more onions.
Whisk the salad dressing, sour cream and chili sauce together in a bowl.
Stir in the horseradish and cayenne pepper until well blended.
Serve the Cajun sauce with the cooled onion rings.
