Dad Doesn't Have to Grill Shrimp - In most homes when it comes to grilling Dad usually does the cooking. This year give Dad a break and grill up these tasty shrimp for him. If grilling is just not possible these shrimp can also be cooked in the broiler 4 inches for the heat source for 3 minutes on each side.

Dad Doesn't Have to Grill Shrimp

Ingredients:

• 1/2 C of apricot preserves
• 1 tsp canola oil
• 1 tsp soy sauce
• 1/2 tsp red pepper flakes, crushed
• 1 lb. large shrimp, peeled, deveined and uncooked.

Preparation:

1. Heat the grill to medium temperature.
2. Place the preserves in a small mixing bowl.
3. Whisk in the canola oil and soy sauce.
4. Fold the red pepper flakes into the mixture well.
5. Thread the shrimp onto metal skewers.
6. Baste both sides of the shrimp well with the apricot mixture.
7. Place the shrimp on the grill and do not cover.
8. Grill 3 minutes basting a couple of times.
9. Turn and continuing grill and basting for an additional 3 minutes or until the shrimp turn pink.

Makes 12 servings

Preparation Time: approximately 10 minutes
Grilling Time: approximately 6 minutes
Total Time: approximately 16 minutes
