Dad's Gone Fishing Catfish
Ingredients:
1 C pecans, chopped very fine and divided
1/2 C cornmeal
1 tsp salt, divided
1 tsp pepper, divided
4 (6 oz.) catfish fillets
1/2 C butter, divided
1/2 C heavy whipping cream
2 tbsp lemon juice
1 tsp parsley flakes
Preparation:
Place a half of cup of the pecans into a shallow mixing bowl.
Add the cornmeal, half of the salt and half of the pepper tossing to combine.
Coat the fillets well with the pecan mixture.
Place half of the butter into a skillet and place the skillet over medium high heat.
When the butter has melted add the fillets.
Cook for 6 minutes then turn and cook an additional 6 minutes or until the fish flakes easily with a fork.
Remove the fillets and keep warm.
Melt the remaining butter of medium heat in the same skillet.
Stir the remaining pecans into the melted butter and cook 1 minute.
Pour the whipping cream and lemon juice into the skillet.
Add the remaining salt and pepper and stirring constantly cook 1 additional minute.
Stir the parsley into the mixture.
Spoon the sauce over the fillets just before serving.
Makes 4 servings
