Fill Dad up Baked Potato
Ingredients:
4 large baking potatoes
1/4 C Parmesan cheese, grated
1/4 C mozzarella cheese, shredded
1/4 tsp salt
1/4 tsp pepper
4 tsp butter
Preparation:
Scrub and rinse the potatoes well.
Pierce each potato several times with a fork.
Place the potatoes on a microwave safe dish.
Microwave the potatoes on high 7 minutes.
Turn the potatoes and continue microwaving an additional 5 minutes or until tender.
Place both types of cheese into a mixing bowl.
Sprinkle the cheese with salt and pepper and toss to combine.
When the potatoes have cooled slightly cut an X in the top of each of the potatoes.
Fluff the pulp with fork.
Place 1 tsp of butter on each potato.
Top each potato with 1/4 of the cheese mixture.
Return the potatoes to the microwave for 30 seconds or until the cheese has just started to melt.
