It's Almost Filet Mignon - Dad will love these almost filet mignons. Add a potato and a salad and he'll feel like he's being treated like the king he is. Use Dad's favorite steak sauce in place of the ketchup if you prefer.

It's Almost Filet Mignon
Ingredients:
6 bacon strips
2 eggs
3/4 C saltines, crushed
2 tbsp onion, chopped
1 1/2 tsp salt
1/8 tsp pepper
1 lb. ground beef
1/2 C of ketchup
2 tbsp brown sugar
1/4 tsp ground mustard
Preparation:
Line a microwave safe plate with paper towel.
Lay the strips of bacon onto the paper towel in a single layer.
Cover the bacon with more paper towel.
Microwave on high 2 minutes or until cooked but not crisp.
Preset the oven to broil and allow the broiler to preheat.
Break the eggs into a mixing bowl and beat slightly with a fork.
Fold in the crackers, the onion, and the salt and pepper until well combined.
Crumble the meat into the bowl and using your hands mix all the ingredients together well.
Form the mixture into 6 hamburger patties.
Wrap one slice of bacon around each patty and secure it with a toothpick.
Place the patties on an ungreased broiler pan.
Broil 4 inches from the heat for 6 minutes.
Whisk together the ketchup, brown sugar and ground mustard.
Turn the patties over and place a dollop of the ketchup mixture on top of each patty.
Continue broiling 6 minutes or until the meat is cooked through and bacon is crisp.
Makes 6 servings

Total Time: approximately 32 minutes
