Marinated Pork and Apricot Salad
Ingredients:
1 (15 oz.) can apricot halves
1/4 C soy sauce
1 tbsp canola oil
1 tbsp brown sugar
1/2 tsp ground ginger
1/2 tsp garlic, minced
1/4 tsp ground dry mustard
1 (1 lb.) pork tenderloin, sliced thin
2 (9 3/4 oz.) pkgs. salad mix
Preparation:
Drain the apricots reserving 1/2 C of the juice.
Pour the reserved juice, soy sauce and oil into a large sealable plastic bag.
Add the brown sugar, ginger, garlic and mustard to the bag.
Seal the bag and shake until all the ingredients are blended together well.
Add the pork and reseal the bag.
Turn the bag a few times to be sure the meat is well coated with the marinade.
Refrigerate the marinade and meat for at least 1 hour.
Remove the meat from the marinade and throw away the used marinade.
Place the meat in a large skillet over medium heat.
Stir fry the meat for 5 minutes or until the juices run clear.
Place the salad mix into a large bowl.
Add the meat and apricots to the salad mix and toss until well combined.
