Nutty Chocolate Chip Coconut Muffins - Wake Dad up on his special day with a glass of juice, a hot cup of coffee and homemade muffins. Colored sugar may be sprinkled over the muffins just before baking. The coconut is optional in this recipe.

Nutty Chocolate Chip Coconut Muffins
Ingredients:
1 C of flour
1/2 C of sugar
1 1/4 tsp baking powder
1/4 tsp salt
1 egg
1/2 C of sour cream
1/4 C of butter, melted
1/4 C of almond extract
1/2 C flaked coconut
1/4 C miniature semisweet chocolate chips
1/4 C of slivered almonds
Preparation:
Place the oven temperature at 375 degrees allowing the oven to preheat.
Spray 6 muffin cups well with a non stick cooking spray.
Place the flour, sugar, baking powder and salt into a mixing bowl and stir to combine.
Carefully break the egg into a separate bowl.
Fold in the sour cream, butter and almond extract until well combined.
Stir the mixture into the dry ingredients just until the dry ingredients are moistened.
Fold the coconut and chocolate chips into the batter.
Fill the prepared muffin cups 2/3 full of the batter.
Sprinkle the tops of each muffin with almond slivers.
Bake 18 minutes or until a toothpick inserted in the center comes out clean.
Allow the muffins to cool in the pan 5 minutes then transfer to a wire rack to continue cooling.
