Southern Cajun Chicken Sandwich
Ingredients:
4 boneless skinless chicken breasts
1 1/2 C cornflake cereal, crushed
1/2 C baking mix
2 tsp Cajun seasoning
2 tbsp butter
1/2 C water
Preparation:
Place the chicken breasts between wax paper and using a meat hammer flatten the breasts to 1/4 inch thickness.
Place the crushed cereal into a mixing bowl.
Add in the baking mix and Cajun seasoning and stir to blend together well.
Place the butter into a skillet positioned over medium heat and allow the butter to melt.
Dip the chicken into the water then dip into the cereal mixture being sure to coat the chicken completely.
Place the coated chicken into the skillet and cook 6 minutes.
Turn the chicken and continue cooking 5 minutes or until the juices run clear when poked with a fork.
