Southwest Fiesta Beans - Make Dad's meal a southwestern fiesta by serving these beans with a spicy burger and a nice cool drink.

Southwest Fiesta Beans

Ingredients:

• 1 (15 oz.) can kidney beans, rinsed and drained
• 1 (15 oz.) can great northern beans, rinsed and drained
• 1 (14 1/2 oz.) can stewed tomatoes with juice
• 1/2 C of salsa
• 1/4 C of ketchup
• 4 green onions, sliced

Preparation:

1. Pour the kidney beans and great northern beans into a 2 qt. saucepan.
2. Stir in the tomatoes with their juice until well combined.
3. Fold in the salsa and ketchup.
4. Place the pan over medium heat and stirring occasionally; bring the mixture to a boil.
5. Stirring occasionally cook the mixture for 15 minutes or until heated through and the beans are as soft as like.
6. Pour the beans into a serving bowl and top with the green onions.

Makes 6 servings
