Stuffed Potatoes in a Flash
Ingredients:
4 large baking potatoes
3 tbsp butter, softened
2/3 C of sour cream
1/2 tsp garlic, minced
3/4 tsp salt
1/4 tsp pepper
1/2 C cheddar cheese, shredded
Preparation:
Scrub the potatoes under cool water then pierce with a fork.
Place the potatoes on a microwave safe plate and microwave on high for 6 minutes.
Turn the potatoes and continue to microwave for 5 minutes or until tender.
Allow the potatoes to cool just enough to handle.
Cut the potatoes in half lengthwise and scoop out the pulp leaving a thin shell.
Place the pulp into a mixing bowl.
Add the butter to the pulp and mash the potatoes well.
Stir the sour cream into the mashed potatoes.
Add the garlic, salt and pepper the stir to combine.
Spoon the mixture back into the potato shells.
Sprinkle the top of each potato with cheese.
Return the potatoes to the microwave for 1 minute or until heated through and the cheese is melted.
