Swiss Cheese and Hash Brown Potato Pancakes - Serve these potato pancakes as a side at breakfast or with a sandwich for lunch. Either way Dad will appreciate the effort you put into making these just for him.

Swiss Cheese and Hash Brown Potato Pancakes
1 1/4 C frozen shredded hash browns, thawed
1/2 C apple, chopped fine
1/4 C of onion, chopped fine
1 tsp of chives
1/4 tsp of salt
1/4 tsp of pepper
2 tbsp of butter, divided
2 tbsp vegetable oil, divided
1/2 C Swiss cheese, shredded
Place the hash browns into a mixing bowl.
Add in the apples, onions and chives tossing to combine with the potatoes.
Sprinkle in the salt and pepper and stir until blended in well.
Melt 1 tbsp of the butter in a skillet that's been placed over medium high heat.
Add 1 tbsp of oil and stir to blend it with the melted butter.
Spread half of the hash brown mixture evenly into the skillet.
Sprinkle the cheese over the top of the potatoes.
Spread the remaining hash browns over the top of the cheese.
Use a spatula and press the hash brown mixture down into the skillet.
Cook the potato mixture for 5 minutes or until the bottom of the potatoes is browned.
Invert the pancake onto a serving platter.
Melt the remaining butter and stir the remaining oil into the butter.
Place the potato pancake, browned side up, back into the skillet.
Cook an additional 5 minutes or until the bottom is browned and the cheese has completely melted.
Invert onto the serving patter again and cut into wedges.
