All American Apple Pie Bars - This treat is sure to please everyone at your BBQ. Makes 3 dozen bars.

All American Apple Pie Bars

Ingredients:

  • 2 1/2 C + 1 t of flour, divided
  • 2 T + 1 C of sugar, divided
  • 1/4 t of salt
  • 1 C shortening
  • 2 eggs, separated
  • 1/3 C + 2 T of milk, divided
  • 1 C crispy rice cereal
  • 8 C of tart apples, peeled and sliced
  • 1/2 t ground cinnamon
  • 1 C of confectioners’ sugar

Preparation:

  1. Set the oven temperature control to 350 degrees allowing the oven to preheat.
  2. Place 2 1/2 C of flour into a mixing bowl.
  3. Mix in 2 T of sugar and the salt until well combined.
  4. Cut the shortening in to the mixture using a pastry blender crumbly.
  5. Place the egg yolks in a bowl and beat lightly with a fork.
  6. Add 1/3 C of milk to the egg yolks and mix until blended together well.
  7. Slowly pour the egg mixture into the crumbly mixture tossing with a fork until a soft dough forms.
  8. Lightly flour a flat surface and turn half of the dough onto the prepared area.
  9. Roll the dough out into a 15 X 10 inch rectangle.
  10. Place the dough onto an ungreased 15 X 10 inch baking sheet.
  11. Sprinkle the prepared dough with the cereal.
  12. Arrange the apple slices over the top of the cereal.
  13. Place the remaining flour and sugar into a small mixing bowl.
  14. Add the cinnamon and stir until combined.
  15. Sprinkle the mixture over the top of the apples.
  16. Place the second half of the dough onto a lightly floured surface.
  17. Roll the dough into a second 15 X 10 rectangle and place over the top.
  18. Cut slits in the dough to allow steam to escape.
  19. Place the egg whites in a small bowl and beat lightly with a fork.
  20. Brush the egg whites evenly over the top piece of dough.
  21. Bake 50 minutes or until golden brown.
  22. Remove the bars to a wire rack to cool.
  23. Place the confectioners’ sugar into a bowl.
  24. Add the 2 T of milk, a little at time, stirring after each addition until the glaze becomes smooth enough to drizzle.
  25. Drizzle over the top of the bars before cutting.

Makes 3 dozen bars
