Creamy Crunchy Cucumbers - Nothing says summer better than cucumbers. These sweet yet slightly tart gems are crunchy and bathed in a creamy sauce. For a little color just add a few chopped pimentos.

Creamy Crunchy Cucumbers

Ingredients:

• 1/2 C of sour cream
• 3 tbsp white vinegar
• 1 tbsp sugar
• 1/4 tsp pepper
• 4 cucumbers, sliced thin
• 1 sweet onion, sliced thin and separated into rings

Preparation:

1. Whisk the sour cream and vinegar together in a mixing bowl.
2. Add the sugar and pepper and whisk until the sugar has dissolved.
3. Place the cucumber and onions into a serving bowl.
4. Fold the sauce into the cucumbers until blended together well.
5. Cover the bowl and chill for at least 4 hours.
6. Stir again before serving.

Makes 8 servings

Preparation Time: approximately 15 minutes
Chilling Time: approximately 4 hours
Total Time: approximately 4 hours 15 minutes
