Frozen Surprise Watermelon - When you cut into this dessert you'll be surprise to find it looks just like a watermelon. The layers of tinted ice cream and the chocolate chip seeds give this dessert a delicious taste and make it the talk of the party. If you do not like pistachio ice cream vanilla ice cream may be used instead.

Frozen Surprise Watermelon

Ingredients:

  • 1 pint of pistachio ice cream, softened
  • 6 drops of green food coloring
  • 1 pint vanilla ice cream, softened
  • 1 pint strawberry ice cream, softened
  • 6 drops of red food coloring
  • 1/2 C miniature semisweet chocolate chips

Preparation:

  1. Place plastic wrap in the bottom and up the sides of a freezer safe bowl.
  2. Place the prepared bowl in the freezer for 30 minutes.
  3. Place the pistachio ice cream into a small bowl and add the green food coloring.
  4. Stir until well combined.
  5. Spread the green ice cream over the bottom and up the sides to within 1/2 into to the top of the bowl.
  6. Freeze 1 hour or until the ice cream is firm.
  7. Spread the vanilla ice cream over the frozen pistachio ice cream and return to the freezer for 2 hours or until firm.
  8. Place the strawberry ice cream into a small mixing bowl, add the red food coloring and stir to combine.
  9. Fold the chocolate chips into the strawberry ice cream.
  10. Spread the strawberry ice cream over the vanilla ice cream.
  11. Cover and freeze the ice cream overnight.
  12. To serve, invert the bowl onto a serving plate.
  13. Remove the bowl and pull off the plastic wrap.

Makes 8 servings

Preparation Time: approximately 25 minutes
Freezing Time: approximately 11 hours
Total Time: approximately 11 hours 25 minutes
