Happy Berry Cheesecake - There's nothing like a bright smile to create a happy atmosphere. This cheesecake will have everyone smiling. If you prefer you can use peeled apple chunks or banana slices for the nose and eyes and strawberries in place of the raspberries. Serve each piece with a small dollop of cool whip topped with the extra pieces of fruit.

Happy Berry Cheesecake

Ingredients:

  • 1 (8 oz.) pkg. cream cheese softened
  • 1 1/2 C of milk
  • 1 (3 oz.) box of lemon instant pudding and pie filling
  • 1 T lemon peel, grated
  • 1 (6 oz.) graham cracker pie crust
  • 1 pint of fresh blueberries
  • 1 pint of fresh raspberries
  • 2 fresh whole strawberries

Preparation:

  1. Mix together with an electric mixer the cream cheese and 1/2 C of milk until blended.
  2. Pour in the remaining milk, the pudding powder and the lemon peel and beat on low speed 2 minutes or just until blended together.
  3. Pour the mixture into the pie crust and spread out evenly.
  4. Cover and chill from 1 to 24 hours.
  5. When ready to serve outline the cheese cake with fresh raspberries.
  6. Place blueberries along the bottom of the cheese cake right above the raspberries to form a smiling mouth.
  7. Cut one strawberry in half and place for the eyes.
  8. Place the other strawberry in the middle for the nose.
  9. Place the remaining blueberries and raspberries in a bowl and serve as a topping.
