Macaroni Salad with a Fruit Twist - This salad makes a great 4th of July side dish. It's not all that sweet and there is no macaroni taste. Add a few drained and chopped maraschino cherries or seedless grapes if you like.

Macaroni Salad with a Fruit Twist
Ingredients:
1/3 C of sugar
1 tbsp flour
1/8 tsp salt
1 (11 oz.) can mandarin oranges with juice
1 (8 oz.) can crushed pineapple with juice
1 egg, lightly beaten
2 C elbow macaroni, cooked
1 C whipped topping
1/4 C pecans, chopped
Preparation:
Place the sugar, flour and salt together in a saucepan.
Drain the juice from both types of fruit into a 1 C measuring cup.
Cover the fruit and chill until ready to use.
If the juice does not measure 1 full C add enough water to obtain the full cup.
Stir the juice into the sugar mixture until smooth.
Place the pan over medium high heat and cook, stirring constantly for 5 minutes or until the mixture is bubbly and thick.
Reduce the heat to low and continue stirring and cooking 1 additional minute.
Remove the pan from the heat.
Remove 1 tbsp of the hot mixture and stir it into the slightly beaten egg.
Stir the egg mixture into the pan mixture and return the pan to medium heat.
Stirring constantly bring the mixture to a light boil.
Continue stirring and cooking 2 minutes then remove from the heat again.
Place the cooked macaroni into a bowl.
Stir the sauce mixture into the macaroni well.
Cover and chill overnight or at least 8 hours.
Just before serving fold in the fruit until well combined.
Fold in the whipped topping well and sprinkle with the pecans.
