Perfect Picnic Slaw - This slaw is perfect for a 4th of July picnic. It's cool and refreshing and because it has no mayonnaise or milk in the dressing you don't have to worry about it spoiling in the summer heat. Be sure to stir the slaw before serving to help incorporate the flavors.

Perfect Picnic Slaw
Ingredients:
1 (2 lb.) head of cabbage, shredded
1 tsp salt
2 C of sugar
1 C of white vinegar
1/4 C of water
1 tsp celery seed
1 tsp mustard seed
1 carrot, shredded
1/2 C green pepper, chopped fine
Preparation:
Place the cabbage in a large bowl.
Sprinkle the salt over the cabbage and toss to combine.
Let the cabbage stand for 1 hour.
Place the sugar into a saucepan.
Pour the vinegar and water over the sugar.
Sprinkle in the celery and mustard seeds.
Stir the mixture to combine well then place the pan over medium heat.
Bring the mixture to a brisk boil.
When boiling, cook the mixture for 1 minute.
Remove the pan from the heat and allow the mixture to cool to room temperature.
Drain the cabbage and return to the bowl.
Fold the carrot and green pepper into the cabbage.
Pour the cooled sauce over the top and stir until well blended in well.
Cover and place in the freezer for at least 4 hours.
