Star Spangled Berry Parfaits - The blueberry puree will give your ice cream a blue-purple tint. These parfaits can be layered. Just add a few blueberries and raspberries over the first layer then repeat each layer again and top with a T of the whipped topping.

Star Spangled Berry Parfaits

Ingredients:

  • 4 C of fresh blueberries, divided
  • 1/2 C sugar
  • 2 T of lemon juice
  • 1 qt. vanilla ice cream, slightly softened
  • 1 (10 oz.) pkg. frozen sliced strawberries in syrup, thawed
  • 2 C frozen whipped topping, thawed
  • 1 C of fresh raspberries

Preparation:

  1. Place 3 C of the blueberries in a saucepan.
  2. Sprinkle the sugar evenly over the top of the berries.
  3. Pour the lemon juice into the saucepan and place the pan over medium heat.
  4. Mash the berries with a potato masher while the mixture begins to simmer.
  5. Allow the mashed berry mixture to simmer 5 minutes.
  6. Pour the heated mixture into the blender an puree until smooth.
  7. Pour the puree into a measuring cup and refrigerate for 2 hours.
  8. Fold the chilled puree into the ice cream and blend together well.
  9. Place the ice cream into a container and freezer for 3 hours or until firm.
  10. Place the thawed strawberries into the blender and puree until smooth.
  11. Place 1 T of the strawberry puree into the bottom of dessert cups.
  12. Add a scoop of the ice cream to each cup.
  13. Top with 1 T of the whipped topping.
  14. Sprinkle with the remaining blueberries and the raspberries.

Makes 16 servings

Preparation Time: approximately 15 minutes
Chilling and Freezing Time: approximately 5 hours
Total Time: approximately 5 hours 15 minutes
