Uncle Sam's Lollipop Cookies - The kids will go crazy over these lollipops. They are not only tasty but fun to make. Chocolate candy coating may also be used if you prefer.

Uncle Sam's Lollipop Cookies

Ingredients:

  • 1/2 C of creamy peanut butter
  • 48 vanilla wafers
  • 24 wooden Popsicle sticks
  • 8 oz. white chocolate candy coating, chopped
  • 2 t shortening
  • Red, white and blue M&M miniature baking bits

Preparation:

  1. Line a baking sheet with wax paper.
  2. Spread the peanut butter of the flat side of 24 of the vanilla wafers.
  3. Place a Popsicle stick about 2/3 of the way up the cookie in the peanut butter.
  4. Add another vanilla wafer.
  5. Place the lollipops onto the prepared baking sheet.
  6. Freeze the lollipops for 7 minutes.
  7. Place the candy coating and shortening into a microwave safe bowl.
  8. Microwave the mixture on high 30 seconds.
  9. Remove and stir until very smooth.
  10. Dip the lollipops into the melted candy coating allowing any excess to drip off.
  11. Place the lollipops back onto the prepared baking sheet.
  12. Place the red, white and blue M&M into the coating.
  13. Return the lollipop to the freezer for 10 minutes or until the candy is set.

Makes 24 lollipops

Preparation Time: approximately 30 minutes
Freezing Time: approximately 17 minutes
Total Time: approximately 47 minutes
