Zesty Turnip Slaw - Sprinkle the top of this slaw with a little celery salt before serving. Chopped pimentos and shredded carrots may also be added to give this salad a little color.

Zesty Turnip Slaw

Ingredients:

• 3 C turnips, peeled and shredded
• 3 tbsp sour cream
• 1 tbsp sugar
• 1 tbsp fresh parsley, minced
• 1 tbsp cider vinegar
• 1 tbsp mayonnaise
• 1/4 tsp salt

Preparation:

1. Place the shredded turnips into a large mixing bowl.
2. In a separate bowl whisk together the sour cream and sugar until blended together well.
3. Blend in the fresh parsley.
4. Add the vinegar and mayonnaise and stir until all the ingredients are well combined.
5. Sprinkle in the salt and blend it into the ingredients well.
6. Pour the mixture over the turnips and stir to coat.
7. Cover and chill for at least 1 hour before serving being sure to stir when removed from the refrigerator.
