Self rising soda bread flour works best in this recipe if you can find it. If not any self rising flour will work too.

Lucky Day Cinnamon Scones

Ingredients:

• 1 C of self rising flour
• 1/8 t salt
• 2 T butter
• 1 egg, lightly beaten
• 3/4 C buttermilk
• 1 egg white
• 1 t cinnamon
• 2 T sugar

Preparation:

1. Allow the oven to heat to 425 degrees.
2. Place the flour and the salt into a sifter and sift together into a large mixing bowl.
3. Work the butter into the mixture with your hands until completely combined.
4. Make a well in the center of the mixture.
5. Add the egg and pour in 1/2 C of the buttermilk.
6. Use your hands and work the mixture into soft dough adding the remaining buttermilk as needed.
7. Lightly flour a flat surface and place the dough on the flour.
8. Roll the dough with a lightly floured rolling pin until it is 1 inch thick.
9. Use a round cookie cutter and cut out 16 two inch round pieces.
10. Brush each round with the egg white.
11. Place the cinnamon in a shaker or small bowl.
12. Add the sugar and shake or mix until completely combined.
13. Shake the cinnamon sugar mixture over each scone.
14. Bake 18 minutes or until a golden brown.

Serves: 8
