These little gems become more flavorful the longer they set. Make them ahead of time and store them for 2 to 3 days to get the full flavor. Give them more of a St. Patrick's Day look by rolling them in green tinted sugar crystals instead of the confectioners' sugar.

St. Patrick's Day Whiskey Balls

Ingredients:

  • 3 ½ C vanilla wafer cookies, crushed
  • 1 C pecans, chopped very fine
  • 1 1/2 cups confectioner's sugar, divided
  • 1/3 C Irish whisky
  • 3 T instant coffee powder
  • 1/3 C light corn syrup

Preparation:

  1. Place the crushed cookies into a mixing bowl.
  2. Add the pecans and toss to combine.
  3. Pour 1 C of the sugar into the mixture and stir to combine well.
  4. Place the whisky into a mixing bowl.
  5. Add the coffee powder and stir until completely dissolved.
  6. Pour the mixture into the cookie mixture.
  7. Add the corn syrup and blend the ingredients together well.
  8. Line a cookie sheet with wax paper.
  9. Form the mixture into balls and place on the wax paper.
  10. Pour the remaining sugar into a shallow bowl.
  11. Roll the coffee balls through the sugar being sure to coat them well.
  12. Allow the balls to stand 15 minutes then store in an airtight container.

Serves: 32 approximately depending on how large you make each ball
